It's summer time and we have been experiencing such lovely weather here in England where we are on holiday and visiting some family. That explains why I have been a bit late in posting some recipes for the month of June my dear readers. We have been traveling and I am just over the jet lag, I think and I hope so.  In the next few days I hope to catch up and I finally I got a new one for you!!

I think I must have been reminded about this many times that it stuck in my head! Thankfully, this is no longer the litmus test before one can marry or many would have flunked right away.

We have our favorite asparagus dishes like the cheesy Asparagus with Parmesan or the  Asparagus Tart but I thought of doing another quick and easy stir-fry type asparagus dish so we don't get bored with the same old, same old.

I am grateful that my kids love to eat vegetables or at least are willing to try new vegetable dishes which is why I try to look for new recipes so they don't get tired of the same old fare. The other day I got some haricots verts instead of the usual green beans. Haricots verts are also called French green beans - they look like the regular green beans but with thinner edible pods and smaller seeds. Nonetheless, despite seeming smaller than their bigger green bean cousins - they are more intense in flavor and taste. Well, at least according to my taste buds!! :)

Every time our friend Samuel comes to the US for a visit he brings with him some delicious spices from his beloved country India!! One time he brought back with him nearly a kilo (2+ pounds) worth of authentic and homemade curry powder made by his mom. Wow! That was and still is, for me, the best curry powder ever, It was vibrant, spicy and made everything I add it to totally yummy! As a result, I have been cooking curry a lot and, as you can imagine, using it a lot, too. What I love about it is that it's so robust in flavor that even a mere teaspoon can truly do wonders to any dish that needs curry powder.

Ever since I have tried these delicious Parmesan crisps I have been addicted to them! I have eaten these years ago but have never attempted making them thinking that perhaps it's complicated. Ha! I was totally wrong!! A few days ago when we bought some parmesan cheese from the grocery I finally decided to make it at home. It was so easy!! Crazy easy!! How could I have not done this before?



 With only 1 ingredient and just a few minutes to make these Parmesan Crisps are the perfect low-carb snacks or crunchy topping for soups and salads! Gluten-free!

So for the benefit of everyone else who loves parmesan crisps but never dared to make them, this is for you.

I love that not only is it great as a low-carb and gluten-free snack (perfect for hubby's diet!!) it is quite versatile and may be used as topping. It's great to add flavor to soup and when crumbled over salad! However you wish to use these crisps - they are guaranteed to be delicious!

How to make Parmesan Crisps

With only 1 ingredient and just a few minutes to make these Parmesan Crisps are the perfect low-carb snacks or crunchy topping for soups and salads! Gluten-free!

Ingredients

  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400 degrees F. Measure a heaping tablespoon of the grated parmesan. Place in a parchment lined baking sheet or silicone baking sheet like a Silpat. Repeat until all the grated Parmesan is gone. Leave a space of at least 1/2 an inch between the parmesan mounds. Gently pat down or flatten the cheese - this is to ensure they are spread out a bit and not clumpy - the thinner - the crispier the result. 
  2. Bake in the preheated oven for about 4-6 minutes or until nicely golden and crisp. Cool and enjoy!
Yield: 8-10 pieces
Prep Time: 00 hrs. 05 mins.
Cook time: 00 hrs. 05 mins.
Total time: 10 mins.

When our schedules are not hectic we love to have people over at our place. We especially love having friends from church during Sunday nights after the evening worship service. It's just a nice and perfect time to relax, enjoy each others company especially before we face the challenges in the real world the next day --- Monday! We enjoy some food and occasionally have some games that everyone can participate in. We don't do anything too formal or structured, the food is mostly the appetizer type - quick and easy in preparation. The point is to enjoy each other's company in a fuss-free environment.

I have been making quite a lot of soup this winter season. You may think, well, that's pretty normal for the cold season. Perhaps but it's not normal for me. Since the Philippines is a hot country with only two major seasons - wet and dry - which incidentally are both relatively warm (hot!) weather, you won't often find soup on a Filipino's daily menu. Besides that, soup, like tea, when served, is often associated with an ailment or being unwell as that's often what's given to anyone who has been afflicted with some illness in the Philippines. Having this background, you can imagine, I am not much of a soup person at all.

Winter season is soup season indeed! Since winter is also the season when you most likely will get sick or catch a bug, I want to make sure that I feed  my family healthy and wholesome food, too. As we all know green and leafy vegetables are one of the best sources of nutrients and Kale is certainly often considered the queen (or was it king?) of greens! Naturally, since it's not exactly candy material and the bright tint of green doesn't excite my kids either - I need to devise some ways to make them eat this healthy veggie!

I have been desiring to make Dutch Baby Pancakes for the longest time but for whatever reason, I never got to. Sad. However,this day was meant to be the day to do it. Sophie, my little girl, approached me this morning and asked me what was for breakfast. She was usually content with cereals or oatmeal and anything with yogurt but today she requested something different. When I mentioned pancakes, she was immediately delighted. I told her, when the idea of Dutch baby pancake popped into my mind, that she may have to wait a little because this is not the regular pancake and it required some baking. She seemed excited about the idea of a new kind of pancake so didn't mind waiting a little at all.

One day earlier in the school year my little boy came home very excited and declared he will be doing some baking the next day. I asked him what inspired him to do that? He said their class baked some pumpkin muffins that day and that he enjoyed them so much he wanted to make them again. He was totally motivated to do it that he, in fact, got the recipe and brought it home!

I love ground beef! We buy it bulk during the beginning of each month and then I separate the meat into 1 pound bags and freeze the ones I won't use immediately. That way when I am in a quandary on what to make for dinner, I can simply pick a bag out of the freezer, saute them with some onions and garlic, add soy sauce or whatever seasoning I fancy and then mix them with any veggies available in the fridge. Easy dinner without the fuss that is quite healthy, too.

I am married to a British guy so we often have desserts in our house! I personally did not grow up having desserts all the time. When I was young, we had it, maybe, once a week usually on a Sunday when my Mom prepared a special lunch for everyone. If we were fortunate, we would have a family size Coke to go with it! We've been to Brussels a couple of times and in each visit we've always had a wonderful time! One thing we truly enjoyed in Belgium is the food....oh glorious food. Brussels is the city where we enjoyed the best fries, best waffles and naturally, the best chocolate! For a foodie like me, it was culinary heaven, indeed! But there is another food from this lovely place that we have totally loved at home and is often requested by hubby as it has become his favorite (insert drum roll here!) - the classic Belgian Stew or Carbonnades a la Flamande, if you want to sound more posh and sophisticated. :)

I love no bake desserts in summer especially this particular summer when we experienced quite a heat wave with temperatures in the upper 90s and heat index of over 100 F. I am from the Philippines so I should be used to this muggy weather, I know, but trust me, even I didn't enjoy it a bit! Thankfully, there are many sweet treats to enjoy this summer and to help us cool down, too. Certainly, this Millionaire Pie is one of them!

I am a happy Mom when my kids willingly eat their vegetables. One vegetable they don't  snub is Zucchini. Perhaps because I add Courgettes (the british name for Zucchini) in breads and cakes but, certainly, they love them in savory dishes, too!
