Easy 2-Ingredient Raspberry Coulis


We had a meeting for our Young and Marrieds group yesterday and I made a no bake chocolate cheesecake as my dessert contribution. It was made with 70% dark chocolate so it was intensely chocolaty and much-loved by hubby who is a huge fan of dark chocolate and I have been a recent convert of his. :)

Strawberry and Raspberry Fool


Hello summer! I love June not only because I was a June bride (we just celebrated our 12th wedding anniversary on June 19!) but because it means the beginning of berry season. From here on the freshest and juiciest strawberries begin to appear on the market to be followed by raspberries, blueberries, cherries, you name it!

Salmon En Papillote with Ginger and Sesame Sauce


I grew up in the tiny island of Marinduque, one of the 7,100+ islands of the Philippine archipelago. We literally lived a few steps away from the beach. As you can imagine, we were blessed with the freshest catch of the day. The fisher folks, after a long night of fishing out in the sea, often came  to our doorstep selling their best catch. Below is a photo of my little boy taken a few years ago with a fish vendor, perhaps he was haggling for a good price!

Beef Mechado


Mechado.....mmmmm. Mechado masarap (too delicious!) is probably what you would hear a Filipino jokingly say when he tastes a really good Mechado dish. The expression is a play on the word "masyado" which means too much or over the top while "masarap" means, as you may have guessed, "delicious."

While this may seem counter-productive to some, truth be told, taking a break no matter how short is so important to our well-being as it gives us time to pause, reflect and truly enjoy life.

It's Strawberry season, woohoo!!! My family are strawberry fanatics - we always have them at home especially for my kids as it's their favorite fruit to snack on. Of course, I love to bake with them, too. The freshest and juiciest strawberries always make any baked goods deliciously delightful!

Easy Thai Shrimp Curry


It seems forever since I made a homemade curry! We are a little spoiled here in New Haven as there are many good curry houses both Thai and Indian so I have been a little lazy in making one at home. I made curry more often when we were in west Michigan as, honestly, there weren't really any good authentic curry there so I had to make them at home a lot of times. But, it turned out well for us as I learned to make really good curry dishes so I am thankful for that opportunity and no regrets!
