It's summer time and we have been experiencing such lovely weather here in England where we are on holiday and visiting some family. That explains why I have been a bit late in posting some recipes for the month of June my dear readers. We have been traveling and I am just over the jet lag, I think and I hope so.  In the next few days I hope to catch up and I finally I got a new one for you!!

We had a lot of snow this past week and as I write it's still a few inches on the ground and according to the weather prediction there will be more dumping come Sunday afternoon! I can't really complain because this winter has been particularly mild and hasn't really snowed a lot until a few days ago. However, since the car was left on the driveway in the middle of the snow storm and the fact that our driveway inclines upwards towards the road - that meant we were stuck for the last couple of days at home.

In my pantry I have as staples chocolate chips, shredded coconut, pecans and condensed milk. I have them handy in case I need to make some delicious sweet treats for the kids and occasionally for coffee break in our church. In one of the old cookbooks I found in Goodwill, one of those produced for a school by some of the parents, I found this recipe for this southern vintage cookies - Hello Dolly Cookie Bars!

Chewy Chocolate Flapjacks (Oat Bars)

When we went to England last November, we enjoyed so many yummy food that we don't often get here in the US. That included delicious British sausages, Christmas pudding, clotted cream or simply any food from Marks and Spencers! We enjoyed lots of Victoria sandwich cakes, scones, shortbread and certainly some yummy chewy flapjacks. Thankfully, flapjacks are easy to make and the ingredients are readily available anywhere in the world unless you don't have oats where you are! In the Philippines we can buy oats so I guess, if our little country has it, I can imagine it is pretty easy to find anywhere else.

Last month we went to England and visited some family and friends. We stayed with my mother-in-law who has a lovely house overlooking the Norfolk Broads. My favorite thing to do when there is simply relax enjoy a cup of tea or coffee and enjoy the lovely scenery by the window. I do have lovely memories of my father-in-law and, recently, my mother-in-law serving us with a delicious homemade espresso-based drink, whether it be a cappuccino or latte, all with a delicious helping of something sweet if we wanted some (there's always a yummy treat in that house!) and we all felt like we were in 5 star accommodation indeed! You see my parents-in-law owned this lovely little machine that allowed them to make espresso at home in a breeze and entertaining became easier for them having that especially when unexpected guests arrive and we had some while we were there. Anyway, since then I have always wanted a little machine like that!

One day earlier in the school year my little boy came home very excited and declared he will be doing some baking the next day. I asked him what inspired him to do that? He said their class baked some pumpkin muffins that day and that he enjoyed them so much he wanted to make them again. He was totally motivated to do it that he, in fact, got the recipe and brought it home!

I just love it when things turn out well in the end! That is what happened to this yummy pound cake which came together on a whim. We usually have a fellowship meal at our church every 3rd Sunday of the month. Each family are encouraged to bring a main dish and either an appetizer or a dessert to go with it. Guess what combo I would often choose? One with the sweets of course!

Hubby and I are huge chocoholics so you can be sure there's always some chocolate hidden somewhere in the fridge for that moment when we have an instant chocolate craving. Naturally, I often use chocolate as a main ingredient for dessert because I can be certain it will always be a hit just because there's chocolate in it. The holidays are over! I feel quite sad as Christmas season is my favorite time of the year. Alas, it seems forever until the next one. Sigh. Thankfully, I still had some remnants of the holidays. A pack of cranberries, half a pack of white chocolate chips and a holiday bundt pan which went on sale so I had no choice but to buy it! That was my excuse anyway. So what does a girl do with these? This is my 13th cranberry recipe in the blog, can you believe it? I only realized that when I counted yesterday. That really shows how much we love cranberries in this family. It's such a great ingredient to use whether for a savory or sweet dish as it imparts a tangy and fresh taste that contrasts, enhances or compliments other flavors. Of course, it is a natural holiday favorite too because of its vibrant red color which makes anything you add it to look festive and gorgeous.

No Bake Individual Pumpkin White Chocolate Cheesecake


We had a ladies' book study at our apartment last Friday and I volunteered to host it. We scheduled it in a way that the study would be done at noon time and thereafter we could have lunch fellowship. I mentioned in the previous post that for the main course I made some hearty Italian Sausage and Tortellini Soup. For dessert, I knew I had to make something with pumpkin and since I never made a pumpkin cheesecake before I attempted to make one.

We had a meeting for our Young and Marrieds group yesterday and I made a no bake chocolate cheesecake as my dessert contribution. It was made with 70% dark chocolate so it was intensely chocolaty and much-loved by hubby who is a huge fan of dark chocolate and I have been a recent convert of his. :)

Green Tea Chocolate Muffins


I am swamped with paperwork today. It's not fun. I've done this routine countless times before. But it's never an enjoyable experience; it's always tedious. I am talking about applying for a visa. Since I still have my Filipino passport, even though I am a permanent resident here in the US, whenever we travel abroad I still have to apply for visas (except when I am travelling around South East Asia where there is reciprocity agreement among neighboring countries so no visas are required).

Chocolate Orange Swirled Cake

We always look forward to the weekend, who doesn't you may ask? Well, we have a particularly good reason for this. Usually throughout the week we hold back from sweets (ok, I must admit we occasionally fail!). The reason is that in the Philippines I grew up having sweets or special treats only during weekends, specially on Sunday after lunch. Even a bottle of Coke (which was considered dessert as it was sweet) was only allowed during weekends. Naturally, I just adapted it for our home. Since I am the cook in the house that has been the unwritten rule.

Triple Chocolate Mayonnaise Cake


I was looking at the file photos of my unpublished recipes and lo and behold I found a few digital copies of this chocolate cake. I was surprised that I haven't shared this yet after nearly a year of making this. I recall baking this for a kind friend and neighbor who helped us paint our house last year before we moved to Connecticut. I made him chocolate cake whenever he was over at our place because I know that it is his favorite dessert.

Pumpkin Chocolate Chip Muffins


My two kids were both born in the month of October and only 3 days apart. As you can imagine, this is quite a busy month for us. Thankfully, since they are still quite young they haven't really demanded their own separate birthday parties yet. For now they are quite happy to celebrate their birthdays in their classrooms with their classmates. There's only one condition I need to fulfill - that is, they want me to make something yummy for their class on their birthday.
