Are you excited for Spring? I am so into spring nowadays!! I've had enough of winter already (though I must say I have no right to complain as this past winter has been pretty mild!)!! Anyway, when I got together with my favorite food bloggers in the world wide web and we decided that our theme for the month of March for our 30 Day Recipe Challenge would be berries - I had no hesitation at all in choosing strawberries as my featured fruit. After all strawberries are the quintessential spring fruit!

The combination of spices plus a hint of citrus goodness make this Butter Chicken totally delicious! Easy, simple, tried and tested recipe made in your slow cooker!

Every time our friend Samuel comes to the US for a visit he brings with him some delicious spices from his beloved country India!! One time he brought back with him nearly a kilo (2+ pounds) worth of authentic and homemade curry powder made by his mom. Wow! That was and still is, for me, the best curry powder ever, It was vibrant, spicy and made everything I add it to totally yummy! As a result, I have been cooking curry a lot and, as you can imagine, using it a lot, too. What I love about it is that it's so robust in flavor that even a mere teaspoon can truly do wonders to any dish that needs curry powder.

This very tasty soup is a huge time saver and great for those busy nights! No chopping or extra prep required to make this yummy Cheese Tortellini and Pesto Soup.

It was just one of those nights when I needed to make dinner but I didn't have enough time. Our fridge had a lot of food in it but it seemed that everything I thought of making required too much effort, lots of ingredients involved and quite a long cooking time, Making Filipino or Asian food was out of the question as that usually required a lot of prep time usually in the form of chopping vegetables. What was a mommy to do?

Ingredients

  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400 degrees F. Measure a heaping tablespoon of the grated parmesan. Place in a parchment lined baking sheet or silicone baking sheet like a Silpat. Repeat until all the grated Parmesan is gone. Leave a space of at least 1/2 an inch between the parmesan mounds. Gently pat down or flatten the cheese - this is to ensure they are spread out a bit and not clumpy - the thinner - the crispier the result.
  2. Bake in the preheated oven for about 4-6 minutes or until nicely golden and crisp. Cool and enjoy!
Yield: 8-10 pieces
Prep Time: 00 hrs. 05 mins.
Cook time: 00 hrs. 05 mins.
Total time: 10 mins.

Mild and fruity chicken curry with the perfect blend of sweet and spicy flavors! Quick and easy to make it's ready in 30 minutes!

I made this chicken curry the other day when we had some friends over. They were all Asians - a Filipino couple and a Chinese couple. Now I didn't feel like cooking something Filipino or Chinese in particular 'cause I thought - that's what they eat perhaps on the daily basis so what's the point? Or maybe I was scared it may taste rather inauthentic so why risk it? LOL. :)
