The perfect summer salad bursting with delicious sweet and savory flavors from apples and grapes, crunchy pecans and shredded chicken all smothered in creamy pesto mayo combo!

It seems like forever since I posted. I do apologize my dear readers for that hiatus. We've been on a month-long holiday in Europe in June which extended up to the first week of July. Thereafter, it took me a little over a week to get over the jet lag and pure exhaustion. I have only been getting back into the swing of things recently and thankfully, now, I feel human again!! Hurrah! :)

How To Caramelize Onions

Just a few ingredients are needed to turn a batch of onions into something delightfully rich, sweet and savory. Use caramelized onions as pizza topping, for sandwiches, salad, to jazz up appetizers and so much more! | manilaspoon.com

I love, love, love caramelized onions! Caramelized onions enhance the flavor of anything you add it to. I discovered this several years ago when I cooked a French-style fish dish which recommended caramelized onions as topping and after that I was hooked. It was so good. Thereafter, it was just a matter of experimenting here and there, adding it to sandwiches, pizzas and so much more. Naturally, when I make my favorite fish dish, you can be sure these sweet onions are always on the side. I love that my family enjoys its taste, too including even my little ones.

Oriental (Asian) Coleslaw

From the time I got to taste this delicious salad many years ago during one of our church potluck dinners, I was hooked. I must admit the first time I saw this salad, I thought it looked weird. Uncooked ramen noodles on top? Really?

Broccoli Bacon Salad with Raisins and Almonds

The first time I have ever had this wonderful American salad was in our church potluck. I wasn't much of a salad eater when I first came to the US. We only had one type of salad in the Philippines and that was always made with iceberg lettuce and always with a thousand island dressing. For us, vegetables were always cooked with meat so eating it raw (which is better really!) wasn't typical at all. It's only recently I believe that we've had more exposure to different types of salad, well at least for me.

Fruity Kale Salad with Asian Vinaigrette

So many of us, I assume, already know the health benefits of Kale so I will not repeat all that information here. And if I am wrong in my assumption, it's quite easy to google it anyway, right? :-)

Italian Fruit Salad

It's that time of year when so many summer fruits are in season. Summer time is my favorite season in Michigan because beautiful berries and other fruits abound. My favorite local fruits are Blueberries and Cherries! I think the Michigan variety are the best. Juicy, plump and just oozing with fruity goodness! Blueberry season has officially began and soon we'll be going blueberry picking. Me and the tots can't wait to do so! If only this season will never end. :-)

Gluten-free Tuna Pasta Salad

It's been over a month now since my husband has changed his diet - dairy-free, soy-free and gluten-free! I know, sounds like an awful chunk of food group(s) have been removed.... It was overwhelming at first and I didn't think I'd be able to cook anything but with some research and a little creativity - it's not impossible to live this way, actually.

Sweet-Tart Apple Walnut Salad

In winter, it can be difficult to eat well. The cold weather almost makes you want to reach out to whatever is nearby and that may not be necessarily a healthy snack but since it's sitting on the counter top or looking at you when you open the fridge, it's so easy to grab them and let go! But since the cold weather brings a lot of sickness and bugs and viruses, it's important to keep yourself healthy and assist your body in fighting infections. While there is no cure-all for the common cold you can certainly help your immune system by eating right. And greens are always good for you!

Thankfully, we can still find salad greens around the supermarket and some of them are organic and pre-packed. I actually found this recipe at the back of the package of one of those pre-packed salads. I thought it sounded great so I adapted it. It was wonderful! Now who can say, salads can't be delish? Add some lovely fruits, a little nuts and sprinkle with cheese - voila and you have a salad that's easy to prepare and scrumptious too! Serve it with your favorite dressing though my honey and I love a simple Balsamic Vinaigrette with it (he makes his own version though we always have a bottle handy for days when you don't have time to whip up one!). Have a great lunch!

Ingredients

1 pack or bag (5-6 oz) of Three-lettuce salad blend (baby red leaf, baby green or red romaine or little gem lettuce combos, etc) or make your own combo
2 medium Gala apples, cored and sliced
3/4 cup or 3 oz, chopped Walnuts
1/3 cup craisins or raisins
1/4 cup Balsamic Vinaigrette (homemade* or store-bought)
1/2-3/4 cup crumbled Feta Cheese

This is how my husband makes his simple Balsamic Vinaigrette - Mix together 2 Tablespoons each of Extra Virgin Olive Oil and Balsamic Vinegar. He doesn't sweeten it at all but if you wish add - 1/2-1 Tablespoon (or to taste) of honey or maple or even agave nectar as sweetener. Season with a little salt and pepper to taste. Enjoy!

Procedure

In a large salad bowl combine the lettuces, apples, walnuts and craisins/raisins. Gently toss together to mix well. Sprinkle the Feta cheese on top. Drizzle with the Balsamic Vinagrette and mix gently. Serve immediately.

Next time I will try crumbled Bleu Cheese with it and also add some green or red grapes! Oh yum!

Fruity Chicken Pasta Salad (aka Pinoy macaroni salad)

Ingredients

1 lb pasta  of your choice, cooked according to package directions (I used fall leaf-shaped pasta)
1 cup raisins
1 cup pineapple chunks (drained)
2 apples, chopped
¾-1 cup cooked (boiled) carrots, chopped
3 Tbsp sweet relish (don't leave this out!)
1 cooked chicken breast, shredded
1 cup of mayonnaise (adjust to taste)
A little salt or sugar (to balance the flavor)

Procedure
In a big bowl, mix all the ingredients until fully coated with the mayonnaise. Adjust the flavor with a little salt or sugar. Make this a day ahead and refrigerate overnight to allow the pasta to fully absorb the flavors. Great for lunch or as a mid-day snack!
