Chocolate Brownie Waffles


Hubby was very kind to give me a waffle maker as gift for Mother's Day. Actually, I have always wanted one so when he asked me what I wanted, I didn't hesitate to say - waffle maker. We are somewhat practical that way, we ask each other what we need and then when we get it, we are actually happy because we know it's something that we need and there's no need to go back to the store because we didn't like what we got. Of course, birthdays are another story, this is when we surprise each other and not let each other know what we are actually getting. That way, we get the best of both world. But it helps that hubby and I know each other fully well after 11 years of marriage so we usually end up with gifts that we truly love and not anything weird. That's a blessing....but I divert.

Strawberry-Blackberry Summer Trifle


Nothing screams of summer deliciousness than a classic English Trifle. It is a chilled dessert composed of creamy thick custard, fruits, sponge cake (often soaked in sherry, wine,  liqueur, etc - totally optional, of course), fruit juice or jelly, whipped cream all arranged in beautiful layers and placed in a deep glass bowl so everyone can gawk at it and appreciate its gorgeousness. The flavors and textures are fantastic and every bite promises your palate every bit of yumminess. How can you resist?

Slow Cooker Chicken Tacos


It's summer time and as you know, no one wants to use the oven during sizzling hot days. Hence, the magical slow cooker becomes the numero uno kitchen appliance that comes in handy. This summer I intend to use it for making all kinds of food from appetizers, main dishes and desserts! Love that you can just dump all the ingredients in and voila a few hours later, you have the most amazing, moist and flavorful dish!

Inihaw na Liempo (Pinoy Pork Barbecue)



In the Philippines, we are truly blessed with so many sunny days, perhaps at least 300 days a year (that's a guess) but growing up I can hardly remember having too many cloudy days. They only actually come when rain is about to pour, when there's a storm brewing or occasionally on monsoon season but they never last long. After a day or two the sun is back with a vengeance. That's because we are located  just a little above the equator which means we almost always get the sun directly on us. Believe it or not though, we take the sun for granted and oftentimes don't like it. Weird, I know, having lived in Michigan which has only about 60 sunny days in a year on average. I think it's because it gets too hot when the sun is out and, being surrounded by water entirely, it's truly humid as well. That explains why we try to avoid walking during daytime, if we can. Just a few steps and you'll be dripping with sweat....yikes.

3-Ingredient Nutella Brownies



Oh Nutella, isn't it one of the most amazing food invention? You can add this to any recipe (dessert, of course) and it just transforms it into something divine. This is why I love to experiment with it and use it whenever I can. And so far, everything I have added it into has become a family favorite, whether in a cheesecake or in cookies and now in brownies.....I wonder what next?

20 Father's Day Sweet and Savory Treats


I am so blessed to have a Dad who is a true and genuine example of a godly man. He not only spoke what was right and wrong; he actually lived it. I will not forget the many nuggets of wisdom I learned from my dad. He seemed to always have the right words to say for a particular situation. There was just no way we can argue with him or get away with a wrongdoing because he was always right. No, he didn't rule us with an iron fist at all; far from it for he is one of the gentlest most soft-spoken person I have ever met (aside from my hubby's Dad who is another wonderful gentleman). He corrected us with discipline naturally and for that I am truly thankful, but it was a rebuke that's tempered with gentleness and not abuse. Even as I have grown I can still remember his many wise words and how he made sure that we grew up doing what is right and pleasing before God. I still have the letters he wrote to me when I went abroad and lived far away from my family. These letters which showed his love for me, I will forever cherish.

This is a wow recipe, simply wow! Not only because it's a No Bake super-easy recipe but because it is totally scrumptious. Layers of pecan crumb crust, delicious caramel filling and then melted chocolate on top - how can you ever resist that?

Birthday Cake Doughnut


Do you know that tomorrow is National Doughnut Day? That means we have the perfect excuse to enjoy our favorite doughnut or at least get a free one from stores who celebrate this wonderful day! My kids love doughnuts (who doesn't?) and can eat them everyday if I allow them to. They have begged me for the longest time to make some for them but I haven't gotten the courage yet to try making them. I always felt I would mess it up and just end up with inedible food. But of course, you never know until you try so perhaps I should just conquer my doughnut-making fear in 2014 and attempt it once and for all.
