Blackberries were on sale the other day so I couldn't help but grab a few punnets. When I went home I wondered what I would do with them. We usually just eat it plain or as is but I thought I ought to make some dessert using the berries because it was the weekend and hubby always wants to have a good dessert during Sunday lunch. I didn't feel like turning the oven on but wanted to have a dessert ready for when we come home. Voila - the slow cooker to the rescue!

Are you excited for Spring? I am so into spring nowadays!! I've had enough of winter already (though I must say I have no right to complain as this past winter has been pretty mild!)!! Hello Dolly Cookie Bars
In my pantry I have as staples chocolate chips, shredded coconut, pecans and condensed milk. I have them handy in case I need to make some delicious sweet treats for the kids and occasionally for coffee break in our church. Chewy Chocolate Flapjacks (Oat Bars)
These oat bars are so delicious and more-ish!! These chocolate-covered and honey-sweetened flapjacks are quick and easy to make, too! Gluten-free.
When we went to England last November, we enjoyed so many yummy food that we don't often get here in the US. That included delicious British sausages, Christmas pudding, clotted cream or simply any food from Marks and Spencers! We enjoyed lots of Victoria sandwich cakes, scones, shortbread and certainly some yummy chewy flapjacks. Thankfully, flapjacks are easy to make and the ingredients are readily available anywhere in the world unless you don't have oats where you are! In the Philippines we can buy oats so I guess, if our little country has it, I can imagine it is pretty easy to find anywhere else.

Last month we went to England and visited some family and friends. We stayed with my mother-in-law who has a lovely house overlooking the Norfolk Broads. My favorite thing to do when there is simply relax enjoy a cup of tea or coffee and enjoy the lovely scenery by the window. I do have lovely memories of my father-in-law and, recently, my mother-in-law serving us with a delicious homemade espresso-based drink, whether it be a cappuccino or latte, all with a delicious helping of something sweet if we wanted some (there's always a yummy treat in that house!) and we all felt like we were in 5 star accommodation indeed! You see my parents-in-law owned this lovely little machine that allowed them to make espresso at home in a breeze and entertaining became easier for them having that especially when unexpected guests arrive and we had some while we were there. Anyway, since then I have always wanted a little machine like that!

The leaves have started to fall and we all feel a chill in the air. Well. at least if you live in New England and thereabouts, where you see evidence of fall everywhere. I love this time of year - the gorgeous hues of yellows, reds and oranges everywhere replacing the monochromatic color of summer, fashionable sweaters and scarves galore and luxurious autumn food, glorious food! After a few months of not wanting to ever turn on the oven because of the summer heat, I am really excited to be doing more cooking and baking in perfectly agreeable temperature! Hurrah for fall baking season!

Chocolate Chip Ricotta Pound Cake

I just love it when things turn out well in the end! That is what happened to this yummy pound cake which came together on a whim. We usually have a fellowship meal at our church every 3rd Sunday of the month. Each family are encouraged to bring a main dish and either an appetizer or a dessert to go with it. Guess what combo I would often choose? One with the sweets of course!

No Bake White Chocolate Mousse and Raspberry Trifle
I am married to a British guy so we often have desserts in our house! I personally did not grow up having desserts all the time. In fact, it was considered a luxury in our house located at a tiny and somewhat remote island in the Philippines. When I was young, we had it, maybe, once a week usually on a Sunday when my Mom prepared a special lunch for everyone. If we were fortunate, we would have a family size Coke to go with it! And because it's sweet - it may count as dessert....yes, seriously!

Millionaire Pie
In 15 minutes or less you can make this easy and yummy classic summer pie that's creamy, fruity-sweet, light and no bake, too. We served this in a potluck and it was a huge hit!
I love no bake desserts in summer especially this particular summer when we experienced quite a heat wave with temperatures in the upper 90s and heat index of over 100 F. I am from the Philippines so I should be used to this muggy weather, I know, but trust me, even I didn't enjoy it a bit! Thankfully, there are many sweet treats to enjoy this summer and to help us cool down, too. Certainly, this Millionaire Pie is one of them!

Blueberry Ricotta Pound Cake

I love summer season and because I was born in South East Asia where it's pretty much summer the whole year through, that is perfectly understandable. What makes summer special for me and my family is the abundance of delicious fruits that can be enjoyed in their freshest state. Certainly, one of our favorite summer fruits is the Blueberry. I resolve to myself that I will try at least one blueberry recipe once a year and enjoy these fruits while at their peak. For this season, I made some blueberry pound cake enhanced with flavors of ricotta cheese and tangy lemons. The result is indeed delicious and my kids and their friends truly loved it!

Pineapple Banana Coffee Cake

Sometimes I buy extra bananas just so I can make Banana cakes. I really love anything with bananas! While oftentimes there aren't enough left-over Bananas to use for baking as the kids would have helped themselves to them, especially my little girl, this week it was a different story. Perhaps because they didn't notice a bunch of bananas sitting on the counter top, which I doubt, or perhaps there was another fruit that captured their attention more. I think it was the latter.

Over a week ago, we bought about 6 pints worth of strawberries because my kids love strawberries and I usually give them fruits for snack in their school. Cranberry Eggnog Espresso Chocolate Chip Cake
This is my 13th cranberry recipe in the blog, can you believe it? I only realized that when I counted yesterday. That really shows how much we love cranberries in this family. It's such a great ingredient to use whether for a savory or sweet dish as it imparts a tangy and fresh taste that contrasts, enhances or compliments other flavors. Of course, it is a natural holiday favorite too because of its vibrant red color which makes anything you add it to look festive and gorgeous.

Who can resist a good chocolate dessert? I certainly cannot! I am such a huge chocoholic that most of the desserts I do in this blog involve chocolate especially the dark and bitter variety. Hubby totally influenced me on that as he's an even bigger chocolate fan than me.
