My family loves eggs for breakfast so we often have eggs as part of our meal. I personally grew up eating a lot of eggs for breakfast as I never had a bowl of cereal growing up. It was always either rice or bread and what else is the perfect pair for either? For my family from the Philippines, it's eggs, particularly fried eggs. I guess this explains why I prefer a savory and hot breakfast over a cold and sweet one.

Last October 2016 my whole family went to England. It was a bittersweet strip. Bitter because we were there as my father-in-law passed away. Sweet, not only because we knew he went to join his Saviour but also because the trip provided the opportunity to have a mini-family reunion as we saw the rest of Mark's family. 

During the trip we stayed with Mark's cousin and the kids finally got to meet their second cousins. It was so nice as all 4 of them got along very well. They were all so excited to exchange stories and compare the similarities between the USA and the UK. Oh they had a blast!

Now while we were there, we were treated to amazing food and this glorious classic British dessert - Sticky Toffee Pudding!! Hubby enjoyed it so much that he asked his cousin for a copy. Thankfully, she obliged and kindly shared the recipe with us. It is a shame that I didn't get the chance to photograph her perfect creation of this pudding. I have found on wikipedia a photo of the pudding - so I had to use that. But don't worry, once I get the chance to make this at home - I will certainly show this dessert in all its glory and update the recipe with the photo so watch this space!!

In the meantime, I decided to add the recipe here as this blog is my online archive for my recipes. This way I can always access the recipe from everywhere.  Enjoy!

Sticky Toffee Pudding

Sticky Toffee Pudding

The classic and well-known British dessert - Sticky Toffee Pudding! Simply the best.

Ingredients

  • 275 ml. boiling Water
  • 175 gr. ready chopped Dates
  • 1 rounded teaspoon bicarbonate of soda
  • 50 gr. salted Butter
  • A pinch of Salt
  • 75 gr. demerara Sugar
  • 75 gr. molasses Sugar
  • 2 Eggs
  • 175 gr. self-raising Flour
  • 1 teaspoon pure Vanilla Extract
  • softened Butter, for greasing

    For the Sticky Toffee Pudding
  • 250 ml. double Cream (heavy cream)
  • 80 gr. salted Butter
  • 80 gr. molasses Sugar

  •   For the Extra Sauce   
  • 300 ml. whipping Cream
  • 50 gr. molasses Sugar
  • 50 gr. salted Butter

    To Serve    
  • Ice cold double cream (optional)


Instructions

  1. Preheat the oven to 350F / 180 C / gas mark 4. Measure the water from a boiled kettle, pour into a bowl and add the dates. Stir and leave until lukewarm. Meanwhile, measure out all the other pudding ingredients, add to the dates and water and stir together. Put this into the bowl of a food processor or liquidizer and puree until smooth, but with a few tell-tale specks of date still visible. Generously butter a baking dish of at least 2-litre capacity on all surfaces and pour in the sponge batter. (Note: It is important that the chosen dish will be filled no more than half-full by the mixture, as it rises a great deal during cooking and you will need room to pour over the topping.) Bake for about 30 minutes, or just until firm to the touch.
  2. Meanwhile, make both the topping and the extra sauce, by heating the ingredients gently in individual pans, whisking regularly, until they briefly boil and then smoothly amalgamate; two pans of butterscotch sauce, effectively. Pour the topping over the cooked pudding and place under a moderate grill until bubbling and sticky looking.
  3. Spoon into individual bowls and pour around the extra sauce. The cold double cream, even though you might think it otiose, offers a very nice, cooling contrast to all that hot, sticky sponge and sweet, saucy sauces. Enjoy!
Yield: 6 Servings
Prep Time: 00 hrs. 20 mins.
Cook time: 00 hrs. 30 mins.
Total time: 50 mins.

I am grateful that my kids love to eat vegetables or at least are willing to try new vegetable dishes which is why I try to look for new recipes so they don't get tired of the same old fare. The other day I got some haricots verts instead of the usual green beans. Haricots verts are also called French green beans - they look like the regular green beans but with thinner edible pods and smaller seeds. Nonetheless, despite seeming smaller than their bigger green bean cousins - they are more intense in flavor and taste. Well, at least according to my taste buds!! :)

Every time our friend Samuel comes to the US for a visit he brings with him some delicious spices from his beloved country India!! One time he brought back with him nearly a kilo (2+ pounds) worth of authentic and homemade curry powder made by his mom. Wow! That was and still is, for me, the best curry powder ever, It was vibrant, spicy and made everything I add it to totally yummy! As a result, I have been cooking curry a lot and, as you can imagine, using it a lot, too. What I love about it is that it's so robust in flavor that even a mere teaspoon can truly do wonders to any dish that needs curry powder.

How to make Parmesan Crisps

With only 1 ingredient and just a few minutes to make these Parmesan Crisps are the perfect low-carb snacks or crunchy topping for soups and salads! Gluten-free!

Ingredients

  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400 degrees F. Measure a heaping tablespoon of the grated parmesan. Place in a parchment lined baking sheet or silicone baking sheet like a Silpat. Repeat until all the grated Parmesan is gone. Leave a space of at least 1/2 an inch between the parmesan mounds. Gently pat down or flatten the cheese - this is to ensure they are spread out a bit and not clumpy - the thinner - the crispier the result. 
  2. Bake in the preheated oven for about 4-6 minutes or until nicely golden and crisp. Cool and enjoy!
Yield: 8-10 pieces
Prep Time: 00 hrs. 05 mins.
Cook time: 00 hrs. 05 mins.
Total time: 10 mins.

When our schedules are not hectic we love to have people over at our place. We especially love having friends from church during Sunday nights after the evening worship service. It's just a nice and perfect time to relax, enjoy each others company especially before we face the challenges in the real world the next day --- Monday! We enjoy some food and occasionally have some games that everyone can participate in. We don't do anything too formal or structured, the food is mostly the appetizer type - quick and easy in preparation. The point is to enjoy each other's company in a fuss-free environment.

I have been making quite a lot of soup this winter season. You may think, well, that's pretty normal for the cold season. Perhaps but it's not normal for me. Since the Philippines is a hot country with only two major seasons - wet and dry - which incidentally are both relatively warm (hot!) weather, you won't often find soup on a Filipino's daily menu. Besides that, soup, like tea, when served, is often associated with an ailment or being unwell as that's often what's given to anyone who has been afflicted with some illness in the Philippines. Having this background, you can imagine, I am not much of a soup person at all.

We had a lot of snow this past week and as I write it's still a few inches on the ground and according to the weather prediction there will be more dumping come Sunday afternoon! I can't really complain because this winter has been particularly mild and hasn't really snowed a lot until a few days ago. However, since the car was left on the driveway in the middle of the snow storm and the fact that our driveway inclines upwards towards the road - that meant we were stuck for the last couple of days at home.

Travel Feature: Kruger National Park, South Africa

If you've never been to a real safari adventure, I hope this travel post will inspire you to do so in the future!


Nearly 10 years ago, hubby and I with our little William (just over 1 year old at that time) travelled to South Africa. Mark helped a church in Pretoria with some pulpit supply while they were looking for a new pastor. We stayed there for about six months. During our time, we made sure that we were able to visit the famous Kruger National Park in South Africa for some safari adventure. We only had a very limited time but we were amazed at the number of animals we saw along the way. Seeing them all in their natural environment was a testament to how beautiful God's creation truly was and still is. Enjoy the adventure! 



Kruger is huge.....it's roughly the size of Israel or Wales, about 350 kilometers long, if I remember correctly. It's an entire country on its own. You can enter Kruger through several gates.
We just entered the first gate we saw early in the afternoon on the day we travelled to Kruger. Our camp was still at least 200 kilometers away. When we reached the gate we were told flatly that we won't make it on time before the gate closes as it takes at least 4 more hours from the Kruger Gate to Satara Camp (roughly in the middle of Kruger Park). At that point we were facing the possibility of sleeping with the lions in the middle of nowhere if we didn't make it before the gate closes! We thought to ourselves - we better make it on time or else we'll be dinner!!




Of course, we couldn't hep but stop along the way as we saw the many glorious inhabitants of Kruger. Impala....one of the first animals we saw....pretty common in Kruger.




Despite the limited time, we had to stop to see this crocodile.




And there's another one....I didn't even realize this was the reason why people stopped, I thought it was the bird.

A kudu - a beautiful antelope but we did not like the steak we tried, it was a little tough for me!




Pit Stop. We were trying to beat the clock to make it on time but had to make a quick stop-over. 




And then the elephants came. Now, we. had to stop again. How could you not?


Wondering where these elephants were off to.



Beautiful watering hole. So amazing to see the animals.



Can you see the bathing hippo?


Buffalos, one of the Big Five. This is our second Big Five - first was the elephant. We were hoping for some lions, leopards, and rhinos to complete them all.


 Naturally, we stopped again to view the buffalos.

More giraffes on our way.


Well, despite lots of stops, so many animals to see....we made it just in time, before the gate to our camp closed. I don't know how we managed it.....I guess, we didn't want to become the night's prey. 



Our mud hut in Satara....highly recommended if you want to see lions, this is were they congregate that's why we chose this camp.


Night Drive....After 2 mins, just about 2 kms from our camp, we saw a pride of lions....and so near our 4x4 as you can see.


The lioness did not like my flash I think.

The King of the jungle just snubbed me. That was an awesome night drive. 


Early morning drive....beautiful sunrise....God's handiwork is everywhere. His creation to me is beyond description at times.


Guess, what? Impalas again....this is why lions love this area....so much food.


More gorgeous antelopes!




Quick break, watching the hippos bathe.


See the ripples, they are the hippos....we don't want to go any nearer than this. They are known for attacking humans and have killed quite a few so we're respecting their space.


Back to the camp for breakfast. You can actually see animals pass by as you eat. We saw some zebras.


After breakfast, we went to the look-out to do some more animal sighting.


Zebras love to line up. Very organized.

Gorgeous bird for sure.


Relaxing hippos. What a life!


Zebras are always on the edge as they never know when a predator would come by.



Warthogs crossing.

A lone wildebeest. And it was time to go.


We had such a lovely time. Short but sweet. We hope to be back next time.
