Are you excited for Spring? I am so into spring nowadays!! I've had enough of winter already (though I must say I have no right to complain as this past winter has been pretty mild!)!! Anyway, when I got together with my favorite food bloggers in the world wide web and we decided that our theme for the month of March for our 30 Day Recipe Challenge would be berries - I had no hesitation at all in choosing strawberries as my featured fruit. After all strawberries are the quintessential spring fruit!

Our fridge had a lot of food in it but it seemed that everything I thought of making required too much effort, lots of ingredients involved and quite a long cooking time, Making Filipino or Asian food was out of the question as that usually required a lot of prep time usually in the form of chopping vegetables. Ever since I have tried these delicious Parmesan crisps I have been addicted to them! I have eaten these years ago but have never attempted making them thinking that perhaps it's complicated. Ha! I was totally wrong!! A few days ago when we bought some parmesan cheese from the grocery I finally decided to make it at home. It was so easy!! Crazy easy!! How could I have not done this before?



 With only 1 ingredient and just a few minutes to make these Parmesan Crisps are the perfect low-carb snacks or crunchy topping for soups and salads! Gluten-free!

So for the benefit of everyone else who loves parmesan crisps but never dared to make them, this is for you.

I love that not only is it great as a low-carb and gluten-free snack (perfect for hubby's diet!!) it is quite versatile and may be used as topping. It's great to add flavor to soup and when crumbled over salad! However you wish to use these crisps - they are guaranteed to be delicious!

How to make Parmesan Crisps

With only 1 ingredient and just a few minutes to make these Parmesan Crisps are the perfect low-carb snacks or crunchy topping for soups and salads! Gluten-free!

Ingredients

  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400 degrees F. Measure a heaping tablespoon of the grated parmesan. Place in a parchment lined baking sheet or silicone baking sheet like a Silpat. Repeat until all the grated Parmesan is gone. Leave a space of at least 1/2 an inch between the parmesan mounds. Gently pat down or flatten the cheese - this is to ensure they are spread out a bit and not clumpy - the thinner - the crispier the result. 
  2. Bake in the preheated oven for about 4-6 minutes or until nicely golden and crisp. Cool and enjoy!
Yield: 8-10 pieces

Cook time: 00 hrs. 05 mins.
Total time: 10 mins.

I have been making quite a lot of soup this winter season. You may think, well, that's pretty normal for the cold season. Perhaps but it's not normal for me. Since the Philippines is a hot country with only two major seasons - wet and dry - which incidentally are both relatively warm (hot!) weather, you won't often find soup on a Filipino's daily menu. Besides that, soup, like tea, when served, is often associated with an ailment or being unwell as that's often what's given to anyone who has been afflicted with some illness in the Philippines. Having this background, you can imagine, I am not much of a soup person at all.

I love summer season and because I was born in South East Asia where it's pretty much summer the whole year through, that is perfectly understandable. What makes summer special for me and my family is the abundance of delicious fruits that can be enjoyed in their freshest state. Certainly, one of our favorite summer fruits is the Blueberry. I resolve to myself that I will try at least one blueberry recipe once a year and enjoy these fruits while at their peak. For this season, I made some blueberry pound cake enhanced with flavors of ricotta cheese and tangy lemons. The result is indeed delicious and my kids and their friends truly loved it!

I am not a breakfast cereal kind of person. Perhaps because I grew up eating rice and meat for my first meal of the day that my body seems to always crave something savory and more substantial. Hello Spring! You know Springtime has arrived when strawberries are already on sale at the grocery. However, we never got the chance to eat all of them because we were away for a few days. This was the time I met my sister who pleasantly surprised me with her presence on my birthday celebration all the way from the Philippines.

Once a month, we have the newly-married couples in our church over for some fun and fellowship. To make it less formal and a relaxed atmosphere we usually have a potluck where everyone who is able may bring either appetizers or side dish to share. So it doesn't get boring, I try to come up with different varieties of dishes to offer. However, there are times when elaborate preparations are impractical as there are always things that come up unexpectedly and so I have to make sure that at the last minute, I have a fall back dish I can easily make when time is running out.

However, I have never tried a cheesy cauliflower soup version. I bought a good-size cauliflower from the grocery the other day and decided to make soup out of it. I needed a delicious bowl of soup for some comfort eating as well since hubby is away on a conference in California for a few days.

Ricotta Meatballs in Creamy White Wine Sauce


Today I felt like a contestant in that popular show from the Food Network - Chopped. I had some left-over ingredients which needed to be used up but they seemed to be an odd assortment. Initially, I felt like it would be weird to merge them in one dish, much like in Chopped (though perhaps not as extreme) where contestants are supposed to come with a yummy dish using a medley of ingredients which you don't normally put together. That was my challenge for the day - how to use in one dish a few pieces of sun-dried tomatoes, a little wine, two types of cheeses and ground beef.

No Bake Nutella Cheesecake

And if there is one dessert that we all can agree on - it's got to be cheesecake - it's pretty obvious as I now have about 4 cheesecake versions on this blog and yes, there'll be more to come. Bagel and Creamy Egg Breakfast Sandwich


We have a bagel shop that does a Baker's dozen (13 pieces instead of 12) every Wednesday, so often we wait until Wednesday to buy our Bagels as they are on sale and so much cheaper. Normally, my kids are happy with just Bagel and Cream Cheese for breakfast, perhaps with a teaspoon or two of jam added for good measure. But sometimes,  I get tired of that same old, same old bagel and cream cheese combo so occasionally I will cook some eggs and have them with bagels instead. When I am feeling indulgent, I spread a little mayo or add a slice of cheese on a toasted and buttered bagel with this creamy egg. A few sprinkles of chopped chives perfectly round-up this delicious and filling breakfast sandwich. Enjoy!

Overnight Blueberry French Toast Casserole

Juicy berries, crunchy walnuts plus yummy cream cheese and warmed up maple syrup make this a fantastic breakfast or brunch dish for Thanksgiving, Christmas and New Year's Day! 


It is an established fact that my family loves French Toast (or eggy bread as my British hubby would say) for breakfast and especially for brunch. I have a few versions of it including 3 in this blog! We surely cannot get enough of it. I have tried many variations of this delicious American-style stuffed French toast but the blueberry version is one of our favorites. It is just so wonderful to bite into this warm overnight-soaked baked bread and then into your mouth suddenly burst delicious juices from the berries! But that's not all - the almost melted cream cheese provides a delightful contrast of texture and flavor which makes your palate truly dance with joy! As if that's not enough, make it even better by drizzling your freshly baked french toast with warmed up pure Maple syrup and then help yourself with a generous dusting of powdered sugar on top to add extra sweetness and love! Aren't you hungry yet?

No Bake White Chocolate Cranberry Cheesecake




Last summer, I made a luxurious White Chocolate Cheesecake that I paired with fresh Raspberries. It's been an instant hit not only at our house but in the blog too as it is one of our most popular recipes. That was inspired by a cake we once tasted at a friend's house in England. Hubby fell in-love with it (being a huge chocolate and cheesecake fan!) and urged me to make a version of the same. That gave birth to the summer fresh raspberry version. When our friend Amy, blogger at Crumbs In My Mustachio invited me to join her and other bloggers for the 12 Cakes of December feature project, I readily said yes because in my mind I knew I had to make a winter version of this delicious summer cheesecake.
