Beef and Bean Enchiladas



Last week I had been craving for something a little spicy. I didn't really fancy making a curry but thought I'd make it a Mexican night in our house. Before we had kids, I used to make Chicken Enchiladas for hubby and myself but have never ever done another one ever since we had kids. Wow, that's almost like a decade ago.

Pasta with Tuna in Creamy Tomato Sauce


When I was in Manila, my sister cooked a yummy tuna pasta with a creamy sauce and the other day I suddenly had a strong craving for it. I looked around our pantry shelves to see if I still have some canned tuna lying around. Thankfully, I found one. Unfortunately though I didn't have any mushrooms to go with my pasta. I thought I'd have to find a way somehow to make a yummy and creamy tuna pasta without mushrooms.

Chicken and Pork Adobo


To say that I love Adobo is an understatement! I live Adobo! The proof - this is my 4th version of this famous Philippine national dish and this may not be the last as I am always on the hunt for different versions of this Pinoy classic. This one is special though as this is my family's personal favorite.

Shrimp in Sour Soup (Sinigang na Hipon)



Living in an island archipelago surrounded by waters can have a lot of advantageous! For me this is the top reason - fresh seafood! So when I went back to the Philippines for a holiday, I asked my mom if she can cook for me Filipino dishes that all involve seafood especially shrimps and prawns which are my ultimate favorite. Of course, I was also thinking that I only have one shrimp recipe on the blog and it's about time I add another one, after all I am from the Philippines where shrimp dishes of different varieties truly abound.

Red Velvet Heart Pancakes


Wow, how times flies indeed! Just a week ago I came back from Manila and after nearly a week of weird sleeping patterns due to jet lag, I hardly noticed that it's almost Valentine's Day! I was often tired and sleepy at the wrong times! Thankfully, my husband is a very amazing and loving guy who patiently took over what should have been my motherly responsibilities (looking after our 2 kids) not only while I was away but even the last few days when I have been desperately trying to get back to a more regular routine. Hence, my transition though painfully slow at times was pretty smooth and I am happy to report I am back to my regular Eastern Time Zone!
