My family loves breakfast and we consider it as the major meal of the day - the meal that propels us throughout the day. As you can imagine it's not just a piece of bread and coffee. Having grown up in an Asian household, I am used to breakfast with rice, eggs and some meat - yes, quite heavy. While I continue to serve hot and cooked breakfast to my family, I am glad that for busy, crazy days I have a delicious and healthy alternative that requires barely 5 minutes of prep and best of all may be done the night before!!!

This is such a crazy week for us! We recently bought a home, just last week actually. We've been renting an apartment the past 2 years since we moved to New Haven, Connecticut. We knew it would be a temporary arrangement and the right time has arrived to move to a new place. Are we excited? We certainly are!!!

Back when we were still living in Michigan, a good friend of ours invited us for dinner at their place. I have always enjoyed the food she served as they were simple, totally uncomplicated, yet very tasty. She had to adjust her cooking style and choice of food early on because her kids suffer some allergies and couldn't tolerate certain foods. Since she had to often use very basic ingredients - just pure whole foods - I truly loved the simplicity of her cooking and how she made them quite tasty, too. I especially loved the way she cooked her vegetables.

What a disaster! No, not this recipe, thankfully, but the fact that I lost the video for this recipe. It is frustrating as I really worked hard to make a video for this and even missed an appointment to finish it on time and then in the twinkle of an eye, it was gone....all gone.

As any parent would know, it is always difficult or at least a challenge to make kids eat vegetables. Now, think about making them eat seafood, particularly fish NOT in nuggets form NOR coated in bread crumbs to disguise what it really is. Yeah, it can be tricky.

Hello Spring! You know Springtime has arrived when strawberries are already on sale at the grocery. Over a week ago, we bought about 6 pints worth of strawberries because my kids love strawberries and I usually give them fruits for snack in their school. However, we never got the chance to eat all of them because we were away for a few days. This was the time I met my sister who pleasantly surprised me with her presence on my birthday celebration all the way from the Philippines.

It's my birthday today!! Hubby just surprised me this afternoon and told me we needed to leave right away for New York City where he arranged a special birthday dinner for me. Wow, I didn't see that coming! I intended to finish this post right away but because of this "surprise" I had to temporarily stop so I could prepare our clothes for the trip.

One Pot Meatballs and Zoodles (Zucchini Noodles)




Last weekend we attended the fair at Durham here in Connecticut. I believe it is the biggest in the state, much anticipated and certainly well-attended. There was so much to see and check out that you can honestly spend an entire day during the fair without getting bored at all. My kids and I had a lovely time checking out the rides, games and exhibits and the animal shows. I have honestly never attended a fair this huge so it was something new and exciting for me.

Easy 2 Ingredient Lentil and Cilantro Dip


First of all, this is not a sponsored post though it feels like it and perhaps I should pitch it to Trader Joe's. :) Anyway, I do owe the recipe to the grocery store so it is but fair to give them full credit. We live fairly near a Trader Joe's store so we naturally go there for some of our grocery needs. Oftentimes, they give out food samples for the customers to try and my kids are more than happy to indulge their little tummies and try some free food!

Easy Chorizo Fried Rice


The other day Mexican chorizos were on sale at Whole Foods so we decided to stack up as we love it for breakfast and it's also quite useful to flavor many other dishes whether Latin-inspired or not. Originally, I wanted to make a breakfast dish with it that can easily be done on the stove top and not baked since it's already starting to warm up and the use of the oven except on occasionally cooler days are now getting limited.

When we visit my in-laws in England, my husband never fails to request his mom to cook this dish. He said that this is one of his favorite food. Having tasted it a few times, I do agree it's a wonderful dish - simple to prepare yet fabulously delicious. I particularly love the crunch that the cashews bring and the flavor that the tarragon imparts to the chicken.

I would have tried to cook this a long time ago if I had the recipe. I don't know why I haven't asked for it. Unfortunately, when my husband was craving this dish for dinner it was  a little too late to call England so I had to make this based on how my hubby remembers it was done.

When we were eating the dish, he suddenly remembered that he forgot to tell me an important ingredient of the dish ---- bacon! How can anyone forget bacon? It's a good thing that when  he mentioned that the chicken was stir-fried --- butter and garlic came to mind. So, it still came out good. The next time I made it for sure bacon was added. If you don't fancy bacon you can just leave it out.

Ingredients

A little olive oil (1 tsp or if using a non-stick pan, a little spray on the pan will do)
3 tbsp butter or 3-4 bacon strips, chopped 
2 cloves garlic, crushed
1 lb chicken breasts (2 large ones), chopped in bite-size pieces
Salt and pepper
4-6 tbsp fresh tarragon, chopped (we love tarragon so we  use a lot of it but it has a strong aniseed-like flavor so adjust to taste!)
1/2 cup roasted cashew nuts (whole or in pieces)

Procedure

Melt the butter in a little oil in a large skillet or frying pan. If you prefer, use bacon instead. Cook the bacon until it turns brown and renders its fat. Sauté the garlic and let it sizzle for a few seconds (not more than a minute to prevent browning). Once the garlic has flavored the butter/bacon fat and oil, you may opt to remove it from the pan but if you love garlic, let it stay!

Raise the heat to medium high and then add the chicken pieces. Season with salt and pepper.  


Stir-fry for about 2-3 minutes or until the chicken has changed its color and is starting to brown a little on its sides.



Stir in the cashew nuts and the tarragon leaves. Cook for another minute or just until chicken is tender.                                                                                       


Garnish with a little more tarragon on top. Serve immediately.


Have it with green veggies on the side. Broccoli perfectly pairs with it.
