Spinach and Cream Cheese Crostini


Crostinis consist of small pieces of toasted or grilled bread served with toppings. They are essentially Italian appetizers which are great for entertaining. I thought since the holidays would soon be with us, it would be great to share a recipe that's easy to make, elegant  enough to serve with company and most of all - delightfully delicious! This recipe for Spinach and Cream Cheese Crostini is all that! Make it this holiday season for your family and friends or as a quick and delectable lunch option! We love these these yummy toasted bread for lunch with our favorite salad! Enjoy! 



Ingredients

1 French Baguette or Italian Bread, cut into 1/2-inch slices
2 teaspoons Butter (or a little Olive Oil)
1 medium Onion, finely chopped
2 Garlic cloves, minced
1 (10 oz) package Spinach  leaves (if frozen, thaw and squeeze dry)
1 (8 oz) package Cream Cheese, softened (room temp)
1/3 cup roasted Red Peppers*
1/2 cup shredded Cheddar (or your favorite cheese)

Handy Tool: Electric Mixer or food processor

Procedure

Preheat the oven to 375F. Slightly toast the Baguette slices in the warmed up oven for about 4-5 minutes. Set aside.

Over medium heat, melt the butter (or use a little Olive oil instead) in a frying pan or skillet. Saute the garlic and onion for a couple of minutes or until they have softened. Add the spinach and cook just until it has wilted. If you are using fresh spinach you may sprinkle a little water to prevent drying-up. Cool the mixture slightly.

Place the softened cream cheese in a mixer bowl (a food processor can also be used instead of a mixer). It helps to cut the cheese into several smaller pieces beforehand. Add the spinach mixture and then stir to combine. Add the roasted peppers and stir again to mix everything.



Spread the spinach-cream cheese mixture on the toasted Baguette slices.


Top each baguette slice with about a teaspoon of the Cheddar or chosen cheese. 


Bake in the preheated oven for about 5-8 minutes or until thoroughly heated and the cheese is melted. Serve warm with some salad. Great as nibbles or appetizers for your holiday table! Easy and delicious!

  1. YUM! I love how creamy this is - can't beat creamed spinach! (apart from maybe putting it on crusty bread and topping with more cheese haha)
