Slow Cooker Salsa Verde Chicken

Simply dump the chicken, salsa verde and seasonings and what comes out of the slow cooker is one super delicious dish. Perfect for your tacos and burritos!


My family loves Mexican food and have it at least once or twice a week. Although Mexican food is pretty reasonably priced we cannot afford to buy it all the time as we would be bankrupt! So for us the only way to satisfy our cravings for tacos, burritos and enchiladas would be if Mom (that's me!) make some and feed her hungry family!

Blackberries were on sale the other day so I couldn't help but grab a few punnets. When  I went home I wondered what I would do with them. We usually just eat it plain or as is but I thought I ought to make some dessert using the berries because it was the weekend and hubby always wants to have a good dessert during Sunday lunch. I didn't feel like turning the oven on but wanted to have a dessert ready for when we come home. Voila - the slow cooker to the rescue!

Every time our friend Samuel comes to the US for a visit he brings with him some delicious spices from his beloved country India!! One time he brought back with him nearly a kilo (2+ pounds) worth of authentic and homemade curry powder made by his mom. Wow! That was and still is, for me, the best curry powder ever, It was vibrant, spicy and made everything I add it to totally yummy! As a result, I have been cooking curry a lot and, as you can imagine, using it a lot, too. What I love about it is that it's so robust in flavor that even a mere teaspoon can truly do wonders to any dish that needs curry powder.

When our schedules are not hectic we love to have people over at our place. We especially love having friends from church during Sunday nights after the evening worship service. It's just a nice and perfect time to relax, enjoy each others company especially before we face the challenges in the real world the next day --- Monday! We enjoy some food and occasionally have some games that everyone can participate in. We don't do anything too formal or structured, the food is mostly the appetizer type - quick and easy in preparation. The point is to enjoy each other's company in a fuss-free environment.

Slow Cooker Beef Caldereta (Kalderetang Baka)

Sometime last year when the weather was starting to get cooler, I had this intense craving for Filipino food. In particular, I was longing for a steamy bowl of Beef Caldereta, a classic Filipino beef stew originally based on a Spanish stew, hence the name, (we were colonized by Spain for over 300 years, remember?) but with a distinctly and authentic Asian flair! It is a dish you will commonly find in any major celebration in the Philippines - weddings, birthdays, anniversaries, you name it. It is usually made with either beef or goat though you may also find versions of chicken or pork. Naturally, it pairs perfectly well with rice!

I feel the chill in the air! It has started to get cooler the past few days and I have seen leaves fall all over the place already which means Autumn has started. Yay! I do love the fall season with all the gorgeous colors that it brings and also the most wonderful and aromatic dishes we associate with it.

We've been to Brussels a couple of times and in each visit we've always had a wonderful time! One thing we truly enjoyed in Belgium is the food....oh glorious food. Brussels is the city where we enjoyed the best fries, best waffles and naturally, the best chocolate! For a foodie like me, it was culinary heaven, indeed! But there is another food from this lovely place that we have totally loved at home and is often requested by hubby as it has become his favorite (insert drum roll here!) - the classic Belgian Stew or Carbonnades a la Flamande, if you want to sound more posh and sophisticated. :)

I love my slow cooker as it's a very reliable ally in the kitchen. While I have used it for a variety of recipes including desserts my favorite dish to cook in my crock pot is a roast. I love the result of melt-in-your mouth tender meat that is so moist and full of flavor as a result of long hours of braising. It just has never failed me so far and my family is always delighted with the outcome.

While I am not an avid fan of winter at all (blame that on my tropical island upbringing!), there are certain things that I like that are associated with it. Christmas season would naturally top the list and of course, being  a food blogger, I love all the food and drink that we often enjoy only during the cold months. Like a steaming mug of hot chocolate for instance or as this post features - a deliciously spiced fruity cider.

Chipotle Copycat Slow Cooker Pork Carnitas



This week we relocated to New Haven, Connecticut and left Holland, Michigan, our home for 10 wonderful years. It was bittersweet. While we are excited to start a new chapter in our life as a family, it is truly sad to leave behind a place that was truly our first home after we got married. There were so many memories both sweet and sad that made our stay in Holland truly memorable. For this post, I won’t dwell on this so much as I will make another one – pure reflections on the 10 years we had in Michigan.

Slow Cooker Chicken Cacciatore


Before I converted my hubby to become a pork and beef lover (particularly ribs), he pretty much ate only chicken. Let me correct that, he ate pork but only in the form of breakfast sausages and particularly the British variety as he believes they make the best sausages in the world - I must say, I do agree. At any rate, he still prefers to have chicken over red meat as he is quite health conscious (I am obviously not as good as him as I love pork too much!).

Slow Cooker Chicken Tacos


It's summer time and as you know, no one wants to use the oven during sizzling hot days. Hence, the magical slow cooker becomes the numero uno kitchen appliance that comes in handy. This summer I intend to use it for making all kinds of food from appetizers, main dishes and desserts! Love that you can just dump all the ingredients in and voila a few hours later, you have the most amazing, moist and flavorful dish!
