Lazy Ice Cream Sandwich Cake


Tomorrow we will have fellowship dinner at church. Apart from a main dish and salad, I included some dessert as well as part of my family's pot luck contribution. Early in the week, I decided to look for a dessert that can be prepared at least a day ahead which does not require much fuss yet still has that palate-pleasing factor.


Thankfully, I found that exact recipe on Pinterest! As I was browsing my Pinterest feed this delicious looking "Lazy Ice Cream Cake" photo popped into my screen and I immediately checked it out. I thought it looked deliciously good and quite easy to make. I admit the word "lazy" kind  of attracted me to it, too! So, when Friday came I purchased the ingredients and made the cake right away. I wanted to test it on my kids first and see how they liked it before I made another one for the church.


As you can imagine, even before I manage  to dress up the cake with more chocolate and caramel sauce over it - they were already bugging me for a piece. I gave in but told them they can only eat a slice between them and have to wait until the cake is fully frozen and, of course, after the photos were taken! ;) They obliged and they absolutely loved the cake! It was worth the wait.


Anyway, I tweaked the recipe a little based on another similar recipe I found at allrecipes.com. I used cool whip instead of the softened ice cream. I guess, I was  too "lazy" to wait for the ice cream to soften! I also made just one thin layer of caramel and hot fudge sauce in the middle instead of two as I didn't want the cake to be overwhelmingly sweet with a double layer. For the adult version, I added some roasted salted peanuts (my kids hate nuts!) and sprinkled them all over and then drizzled some more caramel and chocolate sauce. Oh, wow, did my taste buds sing! It was simply amazing!

NOTE: The recipe below is for an 8x8 pan so simply double the ingredients to make a 9x13. One  (12 oz) bottle each of  the caramel and chocolate fudge is more than enough for an 8x8 but sufficient for a 9x13. So, simply double the whipped cream, ice cream sandwiches and the peanuts (if using).

Lazy Ice Cream Sandwich Cake






Layers of your favorite ice cream sandwich, whipped cream, chocolate fudge and caramel sauces and sprinkled with nuts (and some more sauce on top!) - this Lazy Ice Cream Sandwich Cake is summer's yummiest treat! Did I mention it is crazy EASY to make?

Ingredients

  • 12 Vanilla Ice Cream Sandwiches (or your favorite flavor)
  • 1 (8 oz) container of whipped topping (like Cool Whip)
  • 1/2 of a (12 ounce) jar hot Fudge ice cream topping, warmed up for easy spreading
  • 1/2 of a (12 ounce) jar Caramel ice cream topping
  • A handful of roasted salted peanuts (optional)

Instructions

  1. Line the bottom of an 8x8 pan with a double cover of cling wrap. Make sure the plastic hangs over the edges of the pan. This will make it easier to transfer the frozen cake to a serving platter.
  2. Neatly arrange a layer of about 6 sandwiches on top. Spread half of the whipped cream on top and then pour a thin layer of caramel and fudge sauce (about 4 tablespoons each or to taste). Alternatively, spread the fudge sauce on the sandwiches first (easier to do) then top with whipped cream and the caramel sauce.
  3. Layer the remaining sandwiches on top and then spread the whipped cream over. Make alternate lines of caramel and fudge sauce. Gently drag a toothpick in alternating directions to create the design. Freeze until needed. Once frozen, you can serve this as is or if you wish to be more indulgent, sprinkle some roasted and salted peanuts and drizzle with a little more caramel and fudge sauce on top just before serving. Enjoy!
