One day earlier in the school year my little boy came home very excited and declared he will be doing some baking the next day. I asked him what inspired him to do that? He said their class baked some pumpkin muffins that day and that he enjoyed them so much he wanted to make them again. He was totally motivated to do it that he, in fact, got the recipe and brought it home!

Just before we left for England in early November, I made this Pumpkin Pie Dessert Bars for my family. I was planning to post this earlier but because of the family emergency we had, everything, naturally, had to take the backseat. Nonetheless, at the back of my mind, I haven't forgotten about this truly delightful recipe and made sure to post this at least before Thanksgiving. Besides, who says pumpkin desserts are only for Fall or Thanksgiving? I love pumpkin based desserts so much, I won't even mind having them during the hottest days of summer - so for me, every season is a good season for Pumpkins!!! Agree? :)

No Bake Individual Pumpkin White Chocolate Cheesecake


We had a ladies' book study at our apartment last Friday and I volunteered to host it. We scheduled it in a way that the study would be done at noon time and thereafter we could have lunch fellowship. I mentioned in the previous post that for the main course I made some hearty Italian Sausage and Tortellini Soup. For dessert, I knew I had to make something with pumpkin and since I never made a pumpkin cheesecake before I attempted to make one.

Oh glorious autumn....the cool crisp weather, the falling leaves and the delicious flavors of the season! I am not a fan of winter at all but fall.....I love, love fall. I wish after Fall we can skip winter and proceed to spring so that after the bright reds, yellows and oranges of autumn we will immediately be treated to the delightful sight of vibrant green.

Apple-Pumpkin-Pecan Pie



So many desserts to make, too little time. Don't you often get the feeling that there are so many types of desserts or pies that you want to make for Thanksgiving but you simply don't have the time to make each and every one of them? Or perhaps, you are looking at the feast of pies in front of you during Thanksgiving and wish you can try each slice of pumpkin, pecan or apple pie - but feel like it's way too much to eat all three in one go!  I hear ya! I know the feeling!!!

Pumpkin Chocolate Chip Muffins


My two kids were both born in the month of October and only 3 days apart. As you can imagine, this is quite a busy month for us. Thankfully, since they are still quite young they haven't really demanded their own separate birthday parties yet. For now they are quite happy to celebrate their birthdays in their classrooms with their classmates. There's only one condition I need to fulfill - that is, they want me to make something yummy for their class on their birthday.

Best Pumpkin Pie


Like many of our American readers, I've had my share of tasting so many recipes and varieties of pumpkin pie. In the Philippines, we have a lot of squashes and they are a staple in my country but we don't really grow pumpkins. Perhaps it's the weather, I don't know. So, when I had my first Thanksgiving in Michigan back in 2004 - I was truly fascinated with the concept of using pumpkin (which  back then I just thought of as a regular squash) in a dessert, especially a pie. I thought it was rather strange as we only use squashes for savory dishes and never for dessert. Squashes are considered vegetables and, as such, they are never used for anything sweet. Little did I know that both pumpkin and squashes (at least some!) are actually the perfect ingredients for desserts, too! So glad I finally know.

Spicy Coconut Pumpkin Soup




Nowadays, I am in-love with anything that has coconut in it. Perhaps because I do miss my lovely island of Marinduque where we are surrounded by towering coconut trees. I have so many lovely memories of my childhood that involves this amazing tree and of course, it's delicious fruit. My parents own some piece of land in the barrio (small village in the outskirts of our town). Most of the land is devoted to rice fields but the mountainous areas are all covered with coconut trees. My parents have tenants who stay in the land either for free or for a very low rent and in return cultivate the rice crops among other things. Occasionally, we visited and to see how things were going, if the harvest would be plentiful as the rice that we ate then really came from these fields (well, when I was young I really didn't care for that but my parents did, of course.) For me, I was more concerned if we would either be able to ride the carabao (our beast of burden and really the farmer's best friend in the Philippines) during the visit and if they would be willing to give us some fresh coconuts straight from the tree.

Baked Pumpkin Pancakes



As I have noted in previous posts, my hubby is trying a grain-free diet. Because of this, I am always on the look-out for new recipes that  are gluten-free, preferably, grain-free that I can try and, hopefully, something he would enjoy too. Sometime, last week I was browsing my Manila Spoon news feed when lo, and behold, this yummy recipe for Baked Pumpkin Pancake caught my eye! I was not about to forget this link so I made sure I pinned it to my Favorite's Bar so I can go back to it when I am ready to make it.

So I finally tried the recipe and what a rave review it received from my honey and, needless to say, from me! I made very minor modifications - only because I did not have the exact ingredients as stated in the original recipe. Regardless, it is such an awesome dish that whatever nutty butter or sweetener you use, it's sure to come out good. Also, just to experiment I added some choco chips and raisins on top of the pumpkin batter just before I baked them. They came out great. Mark especially loved the ones with choco chips, who wouldn't? At any rate, with or without toppings these pumpkin pancakes are great for my tummy!

Also, please pardon if the pictures don't do justice to these lovely pancakes. Don't let the not-so-perfect-shots turn you off.  My usual camera is having some issues so I had to rely on the IPhone for these shots. If you ask me though, the phone has done a decent job! Don't you think?

Ingredients

2 eggs
1/2 cup 100% pumpkin puree (not pumpkin pie filling)
1/2 cup crunchy Peanut Butter (or Almond Butter)
1 Tablespoon  Agave Nectar (or Honey / Maple Syrup)
1/2 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon Gluten-free baking powder
A few pieces of Gluten-free Chocolate chips or Raisins for topping (optional)
Maple syrup or preferred sweetener for serving, if desired
Procedure
Preheat oven to 350F and line a baking sheet with parchment paper. I used my silpat so the parchment was unnecessary.
In a medium-size bowl, lightly beat the eggs. A Pyrex measuring cup, as suggested in the original recipe, makes it easy to pour the batter. Quite handy, indeed.  Stir in the pumpkin and the remaining ingredients and mix well.
Pour by 1/4 cupfuls onto the prepared baking sheet and bake for 10-12 minutes or until the pancakes are just cooked through and fluffy. I placed some choco chips and raisins on some pancakes before I baked them.
Serve with maple syrup or sweetener of your choice, if desired. Yummylicious!
