It seems like forever since I posted. I do apologize my dear readers for that hiatus. We've been on a month-long holiday in Europe in June which extended up to the first week of July. Thereafter, it took me a little over a week to get over the jet lag and pure exhaustion. I have only been getting back into the swing of things recently and thankfully, now, I feel human again!! Hurrah! :)

Cheese Tortellini and Pesto Soup
This very tasty soup is a huge time saver and great for those busy nights! No chopping or extra prep required to make this yummy Cheese Tortellini and Pesto Soup.
It was just one of those nights when I needed to make dinner but I didn't have enough time. Our fridge had a lot of food in it but it seemed that everything I thought of making required too much effort, lots of ingredients involved and quite a long cooking time, Making Filipino or Asian food was out of the question as that usually required a lot of prep time usually in the form of chopping vegetables. What was a mommy to do?

Baked Salmon with Pesto and Pecans
Just 3 ingredients to make this easy, quick and very tasty Baked Salmon with Pesto and Pecans. Even non-Salmon fans will love this!
As any parent would know, it is always difficult or at least a challenge to make kids eat vegetables. Now, think about making them eat seafood, particularly fish NOT in nuggets form NOR coated in bread crumbs to disguise what it really is. Yeah, it can be tricky.
