Easy Homemade Rustic Bread


I have heard about the No-Knead Bread craze and should have gotten on the bandwagon a long time ago but for some reason, I postponed and postponed. I was still scared of using yeast. However, I have wanted for the longest time to make homemade bread for the kiddos as I feel the store-bought ones are tasteless, not very fresh and often not very healthy. Besides, my kids love to have sandwiches for lunch so this finally motivated me to attempt making homemade bread.

Irish Soda Bread


I have often been intimidated by yeast breads so more often than not I make cakes or quick breads instead. I feel like I can tackle the latter with more ease and confidence. I know I need to overcome this fear and attempt to make even an ordinary loaf soon - definitely before summer comes as it would be intolerable to turn the oven on during the warmer months.

The Philippines is well known for its Pineapple. We have hectares and hectares of plantations of this juicy, sweet-tangy fruit in the southern part of the country. I remember the first time my husband Mark came to our country over a decade ago. He tasted some pineapples and declared that it was the tastiest pineapple slices he's ever had. I didn't really care much for what he said then as pineapples were no big deal in our country, almost something we take for granted as it's quite common and ordinary.

Strawberry Bread


During the papal visit in the Philippines (January 2015), three working days were declared holidays. Sandwiched in these days is a weekend so there was in-effect a 5-day holiday period. My siblings and I took advantage of this long weekend and decided to go up north and visit the Banaue, Sagada and Baguio areas. These three places are some of the top destinations in the Philippines. Banaue has the world-famous rice terraces considered as the 8th wonder of the world. Sagada is the place to go if you wish to go hiking, climbing, spelunking and engage in other extreme adventures. Of course, Baguio City with its cooler weather is considered as the summer capital of the Philippines.

The other day I went to the grocery for some food shopping. I got excited when I saw some fresh cranberries already being sold. You see, I love baking with cranberries! I love the tangy flavor it imparts to baked goodies particularly sweet breads and cakes. I got myself a pack and decided that I should make my favorite Cranberry Orange Bread when I get home or at least pretty soon. However, as it sometimes happen, I forgot to buy some oranges. I was frustrated because I was really craving some nutty cranberry bread at that time. What was I to do?

Double Chocolate Zucchini Bread


We have been given some huge zucchinis by some friends from church and I didn't know what to do with them! Then I remembered that one of the ladies in our previous church brought some chocolate zucchini bread and I got to taste it there and couldn't believe it had vegetable in it! It was so moist and really tasty and with no hint at all that there's zucchini in it, just plain good chocolate yummy-ness in each bite. I was hooked!

Dark Chocolate Banana Bread


Am always delighted to have left-over bananas as these yummy fruits provide us an excuse to make one of our staple quick bread recipes - Banana Nut Bread. My kids, however, are not always keen with the "bread with nuts" version so to accommodate them, I often make another version loaded with chocolate chips or chunks. However, since we are huge dark chocolate fans, we almost always use the 70% chocolate bar or the bittersweet chocolate for our baking, banana bread included. That way, it doesn't become overly sugary in taste but provides a nice yummy contrast to the sweet bananas.

Feel free to use either choco chips or chunks. But one tip I highly recommend to make anything you bake with chocolate yummy - make sure you use a good quality chocolate - preferably one that you actually eat, not the baking kind. With this you can be assured that your sweet creation is totally scrumptious and full of yummy chocolate goodness! Hope you enjoy this moist and delectable Dark Chocolate Banana Bread!





Ingredients

1 ½ cups flour
teaspoon Baking Soda

1 teaspoon Baking Powder
1/2 teaspoon Salt
1 stick Butter, softened*  

3/4 cup Sugar 
3 very ripe Bananas

2 Eggs, room temperature
3 Tablespoons freshly squeezed Orange/Lemon juice 

Grated zest of one Orange or Lemon (optional but great for extra tang and flavor!)

8 oz (1 cup) 70% Dark Chocolate chunks or Chocolate chips 

*To soften the butter, take it out of the fridge and bring it to room temperature about an hour before you need it.  In case that's not possible here's a good  link on how to soften a butter quickly.

Procedure

Preheat the oven to 350F. Grease a loaf pan or  you can use parchment paper to line your loaf pan, too. Sift together the flour, baking soda, baking powder and salt. Set aside.

Beat the softened butter and sugar until whipped-creamy roughly 5-6 minutes. A stand mixer would be quite handy with this.

Peel and mash the bananas. If you wish you can put the bananas in a food processor to hasten the process and make sure it's smooth. Do this while the mixer is beating the butter and sugar.

Add the eggs to the butter and sugar mixture one at a time. Add the mashed bananas and continue to beat until smooth and no more lumps appear. Pour in the lemon or orange juice and the grated zest. Beat just until combined.

Fold in the dry ingredients (flour mixture). Gently fold in the chocolate chips or chunks. Pour into the prepared loaf pan and bake for about 50-60 minutes or until a tester comes out clean.

Let cool in the loaf pan for 10 minutes. Transfer to a wire rack and cool completely. Enjoy!

So I still had some fresh cranberries left-over from the holiday season that's begging to be used. I didn't fancy making cookies nor cooking extra cranberry sauce. Then an idea struck me when I saw my Apple Praline Bread. Why not try the same recipe for Apples but use Cranberry instead? I know I had to make some adjustments as the cranberries are tart and not as sweet as the apples but with some minor tweaking the result was a truly moist and scrumptious bread, I dare say, as good as the Apple version! From now on this is how I will be making Cranberry Bread! Why haven't I thought of this earlier when there were more Cranberries. Oh well, better late than never!

Christmas Loaf



I have been trying to add more treats to my Christmas repertoire and I chanced upon a cake that used sugar beet and I thought to myself - why not try to make some bread or cake using it. Since red is one of the colors of Christmas then it's great to use Beet to give a vibrant red color to a cake or bread. After all sugar beet is an all natural food coloring. And, it's naturally sweet, too.

Cranberry season has finally arrived! Now I am getting a bit excited because I know that the Christmas holidays are just around the corner. I can even tune in to one radio station where we live and there I can hear Christmas songs already as they have started playing Christmas carols since November 1. Yes, you read it right. I know you may think it's a little early to play Christmas carols in November - after all there's still Thanksgiving to celebrate before the Christmas season, but for me it's no problem at all.

I thought since the holidays would soon be with us, it would be great to share a recipe that's easy to make, elegant  enough to serve with company and most of all - delightfully delicious! If you are Filipino and by any chance a Martial Law Baby (born in the early 70s in the Philippines) then you'd be so familiar with Nutribun. "Nutri" stands for "nutrition" while  "bun" is, obviously, a bread roll. Nutribun is the name given to a bread roll developed in the early 70's by USAID to feed students in public schools in the Philippines. Flour from the USA (and others say from Canada and Australia, too) were shipped to the Philippines to make these bread rolls. Each bun was supposed to contain at least 500 calories and enough nutrients for a day for a child who possibly wouldn't have had anything to eat except for the bread he or she got from school.

Oh Banana bread!!! If there is one baked good that everyone makes for their first attempt at baking - I think it is Banana Bread. There is just something so comforting about this loaf. So homey and just plain delicious. Sometimes though Banana breads can turn out dry or bland so we are always on the lookout for a recipe that does not fail - something that will produce a moist and flavorful loaf.

Cream Cheese and Cherries French Toast

I love make-ahead French Toast Casserole. You can make it in the evening, leave it in the fridge and the next day you can just pop it in the oven and wait for a yummy breakfast treat! I have only tried one French Toast Casserole recipe and that is the one by David Leite of Leite's Culinaria - it is so good that I never bothered to try anything else. Here is the link to the original recipe.

We first had this casserole when we stayed with a New Jersey couple who kindly accommodated us when we visited New York. For our breakfast, this is what she prepared - Deep Dish Brioche French Toast. I fell in love with the dish immediately and had to ask her for the recipe. She kindly printed me a copy and that was when I got acquainted with the amazing website and blog of David Leite.

This recipe is a very slight adaptation of the original just because I had to make use of what's available to me. I hardly see a Brioche Loaf where I live so I had to try another similar buttery sweet roll which in this case was the Hawaiian Sweet Roll. Also, I tried to experiment by using other dried fruits - dried cranberries and cherries instead of just the usual raisins. Wow, now I actually prefer the tangier cherries or cranberries 'cause they provide a delicious contrast with the cream cheese and the sweetness of the bread! I also tweaked the amount of the spices according to my taste. Because of these changes, I decided to use a different title than the original post 'cause I'll never be able to do it with Brioche anyway and from now on I'll only be using mostly cherries or cranberries! :-) So if you are looking for a new French Toast Casserole, I highly recommend this! Enjoy!

Ingredients

Butter or non-stick spray for greasing pan
One 24-ounce brioche loaf or 2 12-ounce Hawaiian Sweet Rolls,  cut into 1-inch cubes
One 8-ounce package cream cheese, cut into 18 cubes
3/4 cup chopped pecans or walnuts
1/2 cup of either dried cherries, cranberries, or raisins or a combo
8 large Eggs
2 cups Milk
1/2 cup firmly packed dark Brown sugar
2 teaspoons Vanilla extract
1 teaspoon ground Cinnamon
1/2 teaspoon ground  Nutmeg
1/8 teaspoon  ground Cloves
4 tablespoons melted Butter

To serve
Powdered sugar
Pure maple syrup, warmed


This is the sweet bread roll that I used for the French Toast. Worked perfectly!


Procedure

Either butter or use a non-stick spray to grease  a 9-x-13-inch baking dish. Place half the bread cubes in a single layer, filling in all the gaps.


Evenly scatter the cream cheese cubes, nuts, and cherries or cranberries (or raisins) on top. Cover completely with the remaining bread cubes.


In a large bowl, whisk together the eggs, milk, brown sugar, vanilla, cinnamon, nutmeg, and cloves. Evenly pour the egg mixture over the bread cubes. Gently press down on the cubes with your palms to allow the top layer of bread to absorb the liquid. Cover with plastic wrap and refrigerate overnight.

The next day, preheat the oven to 350°F (175°C). Meanwhile, remove the dish from the refrigerator and let sit for 20 minutes at room temperature. Bake the French toast covered for 20 minutes; uncover and bake 15 to 20 minutes longer, or until the cubes are nicely toasted and there’s no liquid puddling on the bottom.


Transfer the dish to a rack and drizzle the melted butter on top. Run a knife around the rim of the pan to release the French toast. Let sit 5 minutes. Cut into squares, arrange on individual plates, sprinkle with powdered sugar, and serve along with the warmed maple syrup.

Cranberry Banana Muffins with Chocolate Chips


As we celebrate Thanksgiving, we were reminded of our trip to Plymouth, Massachusetts back in July, 2005. Abigail was six months pregnant with William and we took advantage of the chance to travel to New England before the baby arrived. We chose to go to Plymouth because we wanted to visit the site where the Pilgrims first settled and learn about their history. We were so impressed by the courage of the Pilgrims in the face of many hardships that we were inspired to name our son, William, after William Bradford the second governor of the Plymouth Colony. During their arduous 60 day sea crossing Bradford wrote in his journal, "All great and honourable actions are accompanied with great difficulties and must be both enterprised and overcome with answerable courages". Their Christian faith enabled them to perservere in the midst of great adversity and establish a community where they were free to worship God according to His Word.



While in Plymouth we stayed at the Governor Bradford Inn. It overlooks the historic Plymouth Harbor where the Plymouth Rock and Mayflower II are located.


The Mayflower II is a reproduction of the original Mayflower vessel. It has been recreated to give a sense of what the original 17th century ship was like. Seeing the inside of this very small vessel meant to carry only about 50-60 passengers, (there were about 104 on board), we were amazed at how the Pilgrims managed to survive the journey. We also saw the cramped passengers' quarters, the "hold" where they stored food, clothing and other items needed to start the colony, and the very crude tools used in 17th century navigation. The photo below  shows the Mayflower II journeying from Plymouth, England to Plymouth, Massachussets in 1957.


On board the Mayflower II, you will meet actors dressed in period costumes speaking in 17th century English who will share with you what life was like during the voyage. We met Captain Myles Standish, the military advisor for the Plymouth Colony. He shared with us his experiences while on board and the death of his wife Rose upon arrival at Plymouth.

Over all, it was a very successful trip and we're glad we went. It is a trip that is a highly recommended.



Now to a lighter note, here's a lovely recipe that's great for the holidays - Cranberry Banana Muffins.



Ingredients

1 cup plus 3 Tbsp sugar (I use white)
2 cups flour
2 tsp baking powder
1/2 tsp salt
2 eggs (room temp)
1 cup plain yogurt
1/2 cup banana, mashed (about 1 1/2 bananas - you can use 2 bananas if you prefer)
1/4 cup light olive oil or vegetable oil
1 tsp vanilla (optional)
1 cup cranberries, coarsely chopped
1/2 cup chocolate chips or pieces (optional)

Procedure

Preheat oven to 400 F.

Mix all dry ingredients. Set aside.

In a large mixing bowl, crack the eggs and beat lightly just until combined. Add in the rest of the wet ingredients (yogurt, banana, oil, vanilla) and continue to beat in medium speed until it's smooth and there are no big banana lumps roughly 1-2 minutes.

Adjust the speed to low and then slowly pour in the flour mixture. I try to do this in three parts to prevent the flour from splattering all over the place. Scrape the sides with a spatula after adding each flour. When everything is just combined, stop the the mixer. Fold in the cranberries and the chocolate chips/pieces, if using.

Divide evenly into a 12-cup muffin pan with liners. Bake at 400 for about 18-22 minutes or until a tester comes out clean. Oven heating/temperatures vary so adjust the time accordingly. I use a Demarle Flexipan - the muffin cooks faster here so you may have to adjust the time a bit if using a regular muffin pan. Let this serve as a guide. A friend of mine who made this recipe said it took about 22 minutes for her muffin to fully cook.

Leave it to cool a bit in the pan for about 7-10 minutes and then transfer to a rack to cool completely. The muffins may feel soft when you lift them up but don't worry they will harden as they cool down.

I love that this is just a balance of sweet-tart flavors and comes out really moist even after you have left it standing for a few hours. On occasion when I am feeling rather indulgent, I add 1/2 a cup of chocolate chips! Moist and delicious cranberry muffins!
